Chickpeas, red peppers and Kalamata olives are tossed in a garlicky lemon and olive oil dressing, smothered in silken tofu tzatziki, and stuffed into crisp lettuce leaves in these flavor-packed Greek chickpea lettuce wraps.

I’ve always been what I consider to be a generally healthy eater, but there was definitely a time when I would have skipped over this blog post if it showed up in my feed. I would have skipped anything labeled “lettuce wraps,” for that matter, in search of some bread. Not anymore!
I guess since you’re here, half the battle’s won, so maybe you aren’t as hard a sell as I am. Regardless, I’m just going to put it out there that lettuce wraps are the bomb. I’ll never skip another lettuce wrap post again, unless it has steak or something like that.


I discovered last summer that I really like lettuce wraps and they can be just as satisfying as any old tortilla or pita or whatever wrap. I eat satisfying salads all the time, so I’m not sure why this took so long to sink in. What I really, really love about these lettuce wraps though, is that each one is like a self contained Greek salad, which I consider to be among the most satisfying and delicious of salads. This Greek salad turned out to be one of the tastiest Greek salads I’ve ever had. Maybe the tzaziki had something to do with that. Greek as it may be, I don’t usually see tzatziki on Greek salads, but I made the stuff a while back for this recipe, and seeing as I loved it so much, I figured it was time to see what else I could toss it in.
The other thing about this particular lettuce wrap, for all you carb fiends (myself included) is that it does give you a little carb fix, in the form of chickpeas, which are also conveniently packed with protein. Maybe that’s why these were so darn satisfying.

Greek Chickpea Lettuce Wraps

Ingredients
For the Greek Chickpea Salad
- 1-14oz.can or 1 ¾ cups cooked chickpeasrinsed and drained
- 1red bell pepperdiced
- ½cupKalamata olivespitted and coarsely chopped
- 2scallionschopped
- 1garlic cloveminced
- 2tbsp.lemon juice
- 1tbsp.olive oil
- salt and pepper to taste
For Serving
- 4large leaves of green leaf lettuce
- silken tofu tzatziki
Instructions
- Stir all chickpea salad ingredients together in a medium bowl.
- Divide chickpea salad among lettuce leaves. Top with silken tofu tzatziki and serve.
